Salt-based motsunabe. Originating from Fukuoka prefecture, motsunabe is a type of soup base that goes particularly well with beef offal/tripe. The usual offal used are the small intestine and large intestine where the creamy sweet fat is exceptionally delicious with motsunabe. In Japan, after finishing the hotpot, people usually make use of the rich flavour of the leftover soup by adding ramen noodles.
