A fermented seasoning that combines rich and aromatic extra virgin oil, garlic, and soy sauce as well as enzymes and yeast. No additives of course!
It goes well with hard bread and pasta. You can use it for BBQ seasoning or mix with sashimi for carpaccio! You can also simply mix it with steamed vegetables or place on grilled vegetables for a feast.
The moromi* after squeezing the soy sauce also contains plenty of enzymes and yeast. Oil is added to the moromi to create delicious seasoning.
*Soy sauce moromi is the thick liquid made by fermenting the mixture of soybeans and wheat with koji and salt water. If you squeeze this thick liquid and filter it, you can get soy sauce.
