Agodashi Chankonabe Soup

Traditionally, chankonabe is a robust hot pot filled with all kinds of vegetables and protein in a rich dashi and chicken broth. It is traditionally eaten in huge quantity by sumo wrestlers as part of their weight-gain diet. This soup base uses agodashi (dashi that is extracted by heating and drying flying fish – which have a lower fat content than other fish) producing a light and elegant flavour.
